Lentil and Rice Casserole
This is an inexpensive meal that pairs well with Creamy Cottage Dressing
Ingredients
Spices
- 1 tsp basil
- ½ tsp oregano
- ½ tsp thyme
- ½ tsp garlic
- ½ tsp onion
- 1 cup brown basmati rice
- 1 ½ cup uncooked lentils
Liquid Ingredients
- 4 cups broth
- 2 cups water
Instructions
Pressure Cooker Instructions
- Place all dry ingredients into the pot of the Instant Pot
- Pour liquid over dry ingredients
- Stir with a fork to make certain that the lentils and rice are well distributed
- Place lid on the pressure cooker and set it to seal
- Cook at high pressure for 26 minutes
- When done vent the pressure cooker
- Enjoy a hearty meatless meal
