Lentil and Rice Casserole

This is an inexpensive meal that pairs well with Creamy Cottage Dressing

Cook Time 26 minutes

Ingredients
  

Spices

  • 1 tsp basil
  • ½ tsp oregano
  • ½ tsp thyme
  • ½ tsp garlic
  • ½ tsp onion
  • 1 cup brown basmati rice
  • 1 ½ cup uncooked lentils

Liquid Ingredients

  • 4 cups broth
  • 2 cups water

Instructions
 

Pressure Cooker Instructions

  • Place all dry ingredients into the pot of the Instant Pot
  • Pour liquid over dry ingredients
  • Stir with a fork to make certain that the lentils and rice are well distributed
  • Place lid on the pressure cooker and set it to seal
  • Cook at high pressure for 26 minutes
  • When done vent the pressure cooker
  • Enjoy a hearty meatless meal
